Eliminating Food Waste in Your Home; Is your Rotting Lettuce staring you down too?

I combine such random food when I don't want anything to go to waste. But it's nutritional; I get fueled and full - so that's okay.
I also label an "Eat Me First" container in my fridge since my lettuce and zucchini are always the first to get trashed if I don't.
Some research from www.foodprint.org revealed the estimated 125 to 160 billion pounds of food that goes to waste every year; most of it is perfectly edible & nutritious.
Food waste costs our country $218 billion per year.
Reducing food waste by 15% could provide enough to feed more than 25 million people a year.
Some of the main drivers for food loss at retail stores include:
- Overstocked product displays,
-The expectation of cosmetic perfection of fruits, vegetables, and other foods.
-Oversized packages, the availability of prepared food until closing.
- Expired “sell by” dates, damaged goods, outdated seasonal items.
-Over-purchasing of unpopular foods & understaffing.
Are you surprised? I'm not.
I recently came across a viral post the other day that said, "I go & grab a new pack of meat at the store or just eat out when I forget to take down something to eat."
Sadly, alot of our foods are forgotten and expire before taken down from the freezer to prepare. I've been there before, but I am working towards my very best to eliminate food waste. And it starts in my home.
